Ahhh...These Hatchechubbee Chicks...

Dear Reader,
     In my first post, I remarked that these chicks parade around in my head and take on lives of their own.  Well......yesterday I went for a walk with our dogs and came back with.......yep!......CHICKS!
     And, of course, these chicks paraded right out of my head and onto the canvas!

... And on the canvas, they commenced to parade to the little library in the Land of Hurtsboro. 
They had to return their library books. 
The Land of Hurtsboro is just a hop, skip, and a jump down Highway 26 from where we all  live.


Notice how gracefully and sedately these young chicks are parading? 
Carrying the books on their heads helps immensely with their deportment, don't you think)


... Heading to the Hachechubbee General Store with their handy little re-useable bags...
And, of course, they are hurrying ... The store closes at 6 ...


Earlier this week the Chicks were hurrying to a Valentine-Making Party ... late as usual ...!

Hatchechubbee Mahi...

Dear Reader,
     Husband loves to play with his backyard cooking toys and, in doing so, has created a huge variety of recipes...none of which are ever exactly the same because he doesn't write anything down and is forever trying to better whatever he did the last time!
     He is extremely proud of this Mahi Mahi recipe...so much so that tonight he insisted I watch him so I could see EXACTLY how to do it in case I ever had to cook it...Heaven forbid I ever DO have to because we all know MINE would never match up to HIS!
     Anyway...If I'm going to WATCH, then I'm going to take PICTURES, am I not?!


He lined his ingredients up in order of use...

For someone who doesn't write down his recipes, he was VERY specific about what I should write down...but, lucky for you I streamlined them for this blog post.

             MahiMahi fillets (1 per person
               steeped in                
Lemon Juice
then sprinkled with
Sea Salt
rubbed liberally with
Smoked Paprika
patted on all sides with
Dried Thyme and Rosemary
(make sure the above herbs "stick")

Now...in between the fillets pour a small amount of
Marsala Cooking Wine/Sherry
and "mop" up the wine with the fillets (flipping and turning and rubbing them across the plate.Hubby likened this motion to wiping the counter with a wet rag (shudder)..You may have to add a tad more wine)


Now you are ready for the backtard "play"...


Cover the bottom of a cast iron frying pan with
Extra Light Tasting Olive Oil and heat until steaming.


Place Mahi in hot oil...


Beware...the wine basting may cause the Mahi to burst into flame...





but have no fear (according to Hubby) just pour a little of your Heineken beer into the flame. 


It will flare up briefly and then go out leaving behind a bit more flavor steamed into your MahiMahi.
Hubby does this step each time the fish is flipped (or if oil seems too hot) to steam flavor into the beer as it is browning.


Needless to say, the beer was not a chosen ingredient the first time...it became one when the wine baste flared up and Hubby used the beer he was holding as a fire extinguisher :)

Be careful...this fish does not take long to cook..



Delicious served with buttered white rice and fresh spinach sauteed in light olive oil, garlic pepper sprinkle, and sea salt.

An Obsession, I fear!

Dear Reader,

     These chicks are fast becoming an obsession, I fear!  They have names.....and faces.....and ever-evolving, dynamic personalities.  It's as if they are part me and part others who live or have lived in the real community of Hatchechubbee....

     Pearl, for example, has established her spot as the aggressive and competitive (and quite competent, too, I might add!) leader and instigator of the Hatchechubbee Chicks in Pearls club.
 

     (Pearl really does need a new hat, does she not?   This one makes her resemble an old-fashioned Girl Scout leader…at least in my mind….maybe it’s the placement of the flower?)

     And there’s Ruby, always right smack on the heels of Pearl…always striving for, always hoping to at least share the coveted position of LEADER of the Chicks in Pearls club…

     And then there’s Opal, content to be led by Pearl and Ruby…content to follow along as they lead the “Hatchechubbee parade”….

Parading down a New Path...

Dear Reader,

I am embarking on a new blogging journey, parading down a new path, if you will, so feel free to fall in with this parade as we see where the paths may lead….


I am the only real chick in this parade. All the others are imaginary (although THEY certainly don’t think so) and parade all about in my head day and night until I finally capture one or three with my paintbrush. The more I “capture”, the more there seem to be….so much fun…so merry…yet tiring in their very merriment!
